Crockpot Chicken and Gravy
This is the ultimate cozy, no-fuss comfort meal. Tender chicken cooks low and slow in a rich, savory gravy that’s perfect over mashed potatoes, rice, or biscuits.
Prep time: 10 minutes
Cook time: 4–6 hours on LOW
Serves: 4–6
Ingredients
-
2 lbs boneless, skinless chicken breasts or thighs
-
1 (10.5 oz) can cream of chicken soup
-
1 (0.87 oz) packet chicken gravy mix (or 2 tbsp homemade gravy seasoning)
-
1 (1 oz) packet dry onion soup mix
-
1 cup chicken broth
-
½ cup sour cream or plain Greek yogurt (added at the end)
-
1 tsp garlic powder
-
½ tsp black pepper
-
2 tbsp cornstarch + 3 tbsp cold water (optional, for thicker gravy)
-
Fresh parsley, chopped (for garnish)
Instructions
-
Place chicken in the bottom of a 5–6 quart slow cooker.
-
In a medium bowl, whisk together cream of chicken soup, dry gravy mix, onion soup mix, chicken broth, garlic powder, and pepper until smooth.
-
Pour mixture over the chicken, ensuring it’s mostly covered.
-
Cover and cook on LOW for 4–6 hours or on HIGH for 2.5–3.5 hours, until chicken is tender and easily shreds.
-
Remove chicken and shred with two forks.
-
Optional thickening step:
-
In a small bowl, whisk cornstarch with cold water until smooth.
-
Stir into the gravy in the slow cooker.
-
Cover and cook on HIGH for 15–20 minutes until thickened.
-
-
Stir in sour cream or yogurt until smooth and creamy.
-
Return shredded chicken to the gravy and stir to combine.
-
Serve over mashed potatoes, rice, noodles, or biscuits. Garnish with fresh parsley.
Tips for Success:
-
Don’t overcook chicken breasts—they can dry out. Thighs are more forgiving.
-
For extra flavor, add ½ cup sliced mushrooms, 1 diced onion, or a splash of white wine to the gravy mixture before cooking.
-
No cream of chicken soup? Use cream of mushroom or celery soup, or make a simple roux: melt 3 tbsp butter, whisk in 3 tbsp flour, cook 1 minute, then whisk in 1¼ cups broth until thickened.
-
Gluten-free option: Use gluten-free cream soup, gravy mix, and cornstarch.
-
Storage: Keeps in the fridge for up to 4 days. Freeze for up to 3 months.
Enjoy this simple, satisfying meal that basically makes its own gravy—minimal effort, maximum comfort!
