Prepare cucumbers:
Thinly slice cucumbers (peeling is optional; Germans often leave some skin on for texture). Place slices in a colander, sprinkle with 1 tsp salt, and toss gently. Let drain over a bowl or in the sink for at least 30 minutes (up to 1 hour). This removes excess water and keeps the salad crisp, not soggy.
Rinse quickly and pat dry with a clean kitchen towel or paper towels. -
Make the dressing:
In a large bowl, whisk together sour cream, vinegar, sugar, pepper, and fresh dill until smooth. Adjust salt if needed (remember, cucumbers were salted). -

Add cucumber slices and red onion to the dressing. Gently fold until evenly coated. If dressing is too thick, stir in 1–2 tbsp milk. -
Chill and serve:
