Here’s a delicious, easy version of Pizza Enchiladas you can make at home.
🍕🌮 Pizza Enchiladas
Ingredients

8 flour tortillas

2 cups cooked chicken or beef (shredded or chopped)

1½ cups pizza or marinara sauce

1½ cups mozzarella cheese, shredded

½ cup cheddar or Colby-Jack cheese
-
½ cup sliced black olives (optional)

½ cup chopped bell peppers
-
¼ cup chopped onions
-
½ cup mushrooms (optional)
-
1 teaspoon Italian seasoning
-
½ teaspoon garlic powder
-
Pepperoni slices (optional)
-
Fresh basil or parsley for garnish
🥄 Instructions

Preheat oven to 180°C (350°F).

Prepare the filling
In a bowl, mix:-
Chicken or beef

½ cup pizza sauce

Bell peppers, onions, mushrooms

Italian seasoning & garlic powder

Fill tortillas
Spoon mixture into each tortilla.
Add mozzarella and a few pepperoni slices.
Roll them up and place seam-side down in a greased baking dish. -
Top it off
Pour remaining pizza sauce over the enchiladas.
Sprinkle all remaining cheese on top.
Add olives and extra pepperoni if you like. -
Bake
Bake uncovered for 20–25 minutes until bubbly and golden. -
Garnish
Sprinkle with fresh basil or parsley before serving.
