Lazy Man’s Peach Cobbler
Also known as “dump cake” or “impossible cobbler,” this is the ultimate dessert for when you want something homemade with almost no effort. It magically forms its own crust and topping as it bakes!
Ingredients
-
1 stick (½ cup / 113g) unsalted butter
-
1 cup (125g) all-purpose flour
-
1 cup (200g) granulated sugar
-
2 teaspoons baking powder
-
¼ teaspoon salt
-
1 cup (240ml) milk
-
1 teaspoon vanilla extract (optional but recommended)
-
2 (15 oz / 425g) cans peaches in syrup, undrained (or about 4 cups fresh/frozen sliced peaches + ½ cup water or juice)
-
Ground cinnamon or nutmeg for sprinkling (optional)
Instructions
-
Preheat & Prep: Preheat oven to 350°F (175°C). Place the stick of butter in a 9×13-inch baking dish and put it in the oven to melt while preheating (keep an eye on it so it doesn’t burn).
-
Make Batter: In a medium bowl, whisk together flour, sugar, baking powder, and salt. Add milk and vanilla, and stir until just combined—it will be a thin batter.
-
Assemble (The “Lazy” Part): Once butter is melted, carefully remove the hot dish from the oven. Pour the batter directly over the melted butter—do not stir.
-
Add Peaches: Spoon the undrained peaches and their syrup evenly over the batter—again, do not stir. The layers will look separated (batter on bottom, peaches on top).
-
Bake: Bake for 45–55 minutes, until the top is golden brown and the edges are bubbling. The batter will rise through the peaches and form a cobbler-like crust.
-
Serve: Let cool for 10–15 minutes. It will be saucy! Serve warm, preferably with a scoop of vanilla ice cream or a dollop of whipped cream.
Tips for Success
-
Don’t Stir! The magic of this recipe is in the layers—the batter rises through the fruit as it bakes.
-
Fruit Variations: Substitute with canned cherries, apples, blueberries, or a mix. For fresh fruit, add a little extra liquid (water or juice) to ensure enough syrup.
-
Add-Ins: Sprinkle the top with cinnamon or a little extra sugar before baking for a crispier topping.
-
Storage: Keeps covered at room temperature for 1 day or refrigerated for up to 3 days. Reheat gently in the microwave or oven.
Enjoy this incredibly easy, comforting dessert that basically makes itself!
